Fudgy, rich, and loaded with chocolate chips — these no-bake keto fat bombs taste like cookie dough but are low-carb, high-fat, and totally delicious!
Ingredients
½ cup almond flour
¼ cup powdered erythritol or monk fruit sweetener
¼ tsp vanilla extract
2 tbsp unsalted butter, softened
2 tbsp creamy peanut butter or sunflower seed butter (optional)
2 tbsp coconut oil, melted
¼ cup sugar-free chocolate chips (or cacao nibs)
Pinch of salt
Instructions
In a bowl, mix almond flour, sweetener, salt, and vanilla.
Add softened butter, peanut butter (if using), and melted coconut oil. Stir until a soft dough forms.
Fold in sugar-free chocolate chips.
Scoop out small portions and roll into bite-sized balls using your hands.
Place on a tray and chill in the fridge for at least 30 minutes to firm up.
Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
