Ingredients
1 cup almond flour
¼ cup coconut flour
½ tsp baking soda
Pinch of salt
¼ cup melted coconut oil or butter
½ cup powdered erythritol or monk fruit sweetener (adjust to taste)
1 large egg
½ tsp vanilla extract
¼ cup sugar-free dark chocolate chips (70%+ cocoa)
Optional: crushed nuts or cinnamon for extra flavor
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix almond flour , coconut flour , baking soda , and salt until well combined.
In another bowl, whisk melted oil , powdered sweetener , egg , and vanilla until smooth.
Gradually mix wet ingredients into dry ingredients until a soft, slightly sticky dough forms.
Fold in sugar-free chocolate chips (and optional add-ins like nuts or cinnamon).
Scoop small balls of dough onto the baking sheet, spacing them apart.
Bake for 10–12 minutes until golden around the edges but still soft in the center.
Let cool on the pan for 5–10 minutes before transferring to a wire rack.
