Ingredients
1 cup unsweetened shredded coconut (plus extra for topping)
½ cup almond flour
¼ tsp salt
¼ tsp cinnamon (optional)
½ cup pitted soft dates (Medjool preferred)
2 tbsp melted coconut oil or butter
¼ cup heavy cream or full-fat canned coconut cream
1 tsp vanilla extract
Optional: crushed walnuts or cacao nibs for crunch
FOR KETO/LOW-CARB VERSION:
Use powdered erythritol or allulose to coat the top for extra sweetness. For vegan option, use maple syrup in filling and ensure dates are fresh and soft.
Instructions
In a bowl, mix shredded coconut , almond flour , salt , and cinnamon until well combined.
Press half of the mixture into an 8×8-inch lined dish to form the base.
In a food processor, blend dates , coconut oil , heavy cream , and vanilla until smooth and slightly thickened.
Spread date mixture evenly over the crust.
Top with remaining coconut-almond mixture, pressing firmly to seal.
Chill in the fridge for at least 1–2 hours until firm and sliceable.
