2 Cups Unsweetened Desiccated Coconut (200g)
1/2 Cup Melted Salted Butter (115g)
1/4 Cup Erythritol (50g)
Instructions
Place the desiccated coconut into a medium-sized mixing bowl. Melt the butter, and add the erythritol to the mixture, stirring through. Combine the three ingredients, and line a loaf baking tin with parchment paper. Pour the mixture into the tin, and press down firmly all around to create a level top. Freeze for an hour and enjoy.
