Ingredients
INGREDIENTS: 4 tbsp unsweetened cocoa powder (30g)
½ tsp baking powder (2g)
1 large egg
2 tbsp heavy cream (30ml)
3 tbsp erythritol (36g)
1 tsp vanilla extract (5ml)
1 pinch salt
Instructions
1. Preheat your oven to 350°F (175°C).
2. Combine erythritol and cocoa powder; set aside 1 tsp for serving.
3. In another bowl, whisk the egg until soft.
4. Mix the beaten egg with cocoa mixture, baking powder, vanilla, cream, and salt.
5. Grease 2 muffin cups and pour in the batter.
6. Bake for 10 minutes; do not overbake for a soft center.
7. Serve on a plate, sprinkled with reserved cocoa-erythritol mixture (optional).
