Ingredients
INGREDIENTS: 12 cups popped popcorn (about 1/2 cup unpopped kernels)
1/2 cup unsalted butter
1 cup erythritol brown sugar substitute
2 tablespoons sugar-free corn syrup
1 package (10 oz) sugar-free marshmallows
1 teaspoon vanilla extract
Instructions
1. Pop the popcorn using your preferred method and remove unpopped kernels.
2. In a saucepan, melt butter over medium heat.
3. Stir in erythritol brown sugar and sugar-free corn syrup until dissolved.
4. Add sugar-free marshmallows, stirring until melted and smooth.
5. Remove from heat, stir in vanilla extract.
6. Pour mixture over popcorn, gently coating it.
7. Spread on a foil-lined baking sheet and let cool for 10-15 minutes.
8. Break into clusters and serve.
