Ingredients
For the Dough:
1 cup almond flour
¼ cup coconut flour
¼ tsp salt
2 tbsp melted coconut oil or butter
2–4 tbsp water or unsweetened almond milk (to bind)
1 large egg
For the Filling:
¼ cup sugar-free strawberry jam or low-carb berry spread
1 tsp vanilla extract (optional, for extra flavor)
For the Glaze (Optional):
2 tbsp powdered erythritol or monk fruit sweetener
1 tsp heavy cream or almond milk
½ tsp vanilla extract
Pinch of salt
Instructions
In a bowl, mix almond flour, coconut flour, and salt.
Add melted oil, egg, and gradually add water/milk until a soft dough forms.
Roll out the dough between two sheets of parchment paper to about ¼-inch thickness.
Cut into rectangles (about 3×2 inches). Spoon a small amount of filling in the center of half of them.
Top with remaining dough pieces and press edges with a fork to seal.
Bake at 350°F (175°C) for 12–15 minutes until lightly golden.
Mix glaze ingredients and drizzle over cooled pop tarts before serving
