Sweet, creamy, and totally indulgent — these keto roll-ups are made with soft cream cheese, fresh strawberries, and a low-carb tortilla for a healthy, high-protein snack or breakfast on the go!
Ingredients
4 oz cream cheese, softened
2 tbsp heavy cream or full-fat Greek yogurt (for smooth texture)
¼ cup powdered erythritol or monk fruit sweetener (adjust to taste)
1 tsp vanilla extract
Pinch of salt
4–6 large low-carb or almond flour tortillas
½ cup mashed strawberries (fresh or unsweetened frozen)
Optional: ¼ tsp cinnamon or lemon zest for extra flavor
Optional topping: crushed nuts, sugar-free chocolate shavings, or fresh mint
FOR KETO VERSION:
Use unsweetened strawberry puree or add a few drops of liquid stevia for sweetness. For dairy-free, use vegan cream cheese and coconut cream.
Instructions
In a bowl, beat cream cheese until smooth. Add heavy cream , powdered sweetener , vanilla , and salt . Mix well until thick and spreadable.
Spread mixture evenly over each low-carb tortilla , leaving a small border around the edges.
Spoon mashed strawberries down the center in a line.
Tightly roll up each tortilla like a burrito, tucking in the sides as you go.
Wrap in plastic wrap and chill in the fridge for 15–20 minutes to firm up.
Slice into pinwheels or enjoy whole as a handheld treat.
Optional: Top with crushed almonds, cacao nibs, or a drizzle of melted dark chocolate.
Notes
Make ahead and store in the fridge for easy meal prep! These also freeze well if wrapped tightly — just thaw before serving. Perfect for kids’ lunches or post-workout snacks.
