Description

Fluffy, buttery chaffles with a sweet keto twist — these keto strawberry shortcakes are soft, crisp around the edges, and filled with creamy mascarpone-like goodness for a low-carb dessert or breakfast treat!


Ingredients

For the Chaffle Base:
2 large eggs
¼ cup almond flour
2 tbsp coconut flour
¼ tsp baking powder (aluminum-free)
¼ tsp vanilla extract
Pinch of salt
2 tbsp heavy cream or unsweetened almond milk
2 tbsp melted coconut oil or butter
¼ cup powdered erythritol or monk fruit sweetener (adjust to taste)
Optional: ½ tsp cinnamon or lemon zest for extra flavor
For the Strawberry Filling (Low-Carb):
½ cup mashed fresh strawberries (or unsweetened frozen berries)
2 tbsp powdered sweetener (erythritol or allulose)
1 tsp lemon juice or apple cider vinegar (to balance sweetness)
¼ tsp vanilla extract
Pinch of salt
Optional: 1 tbsp chia seeds for natural jam texture
For the Topping:
Whipped cream or keto mascarpone spread (mix 4 oz cream cheese + ¼ cup heavy cream + vanilla + powdered sweetener)
Extra fresh strawberries
Crushed almonds or cacao nibs (optional for crunch)


Instructions

Make the Chaffle Batter:
In a bowl or blender, whisk eggs , melted oil , heavy cream , and powdered sweetener until smooth and slightly thickened.
Add almond flour , coconut flour , baking powder , vanilla , and salt . Mix well until combined — batter will be thick.
Let rest for 5 mins before cooking.
Cook the Chaffles:
Preheat your waffle iron or chaffle maker . Grease lightly if needed.
Spoon batter into the center and cook for 3–5 minutes per side until golden and crispy on the outside, soft inside.
Tip: Press gently to ensure even cooking.
Remove and let cool completely.
Make the Strawberry Layer:
In a small bowl, mix mashed strawberries , powdered sweetener , lemon juice , vanilla , and salt .
Optional: Stir in chia seeds and let sit for 10–15 mins to thicken into a jam-like layer.
Assemble:
Place one chaffle on a plate. Spread a thick layer of whipped cream or mascarpone mixture over the top.
Add strawberry filling or spoon it between two chaffles like a sandwich.
Garnish with extra strawberries , a dollop of whipped cream, or crushed pecans or walnuts .
