Ingredients

Scale

1 cup mochiko (sweet rice flour) or almond flour (for grain-free option)
½ cup powdered erythritol or monk fruit sweetener
¼ cup coconut milk or heavy cream
¼ cup fresh lemon juice (about 1 lemon)
Zest of 1 lemon
1 tsp vanilla extract
Pinch of salt
Optional: Coconut oil or powdered sweetener for dusting


Instructions

In a bowl, mix mochiko flour (or almond flour), powdered sweetener, coconut milk, lemon juice, zest, vanilla, and salt until smooth.
Cover and chill in the fridge for 30 minutes to firm up (or longer if using almond flour base).
Scoop small portions and roll into oval “chick” shapes using your hands.
Press in raisins or mini chocolate chips for eyes.
Optional: Shape tiny wings and tails from extra dough or use coconut flakes for decoration.
Chill again for 10–15 minutes before serving for best texture.
