1 cup (2 sticks) butter, softened
2 1/2 cups sugar
6 eggs
1 cup sour cream
3 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp vanilla extract
Optional Lemon Glaze
1 cup powdered sugar
2–3 tbsp lemon juice
Instructions
Preheat oven to 325°F and grease a bundt or loaf pan
Cream butter and sugar until light and fluffy
Beat in eggs one at a time
Mix in sour cream, lemon juice, zest, and vanilla
In another bowl, whisk flour, baking soda, and salt
Gradually add dry ingredients to wet mixture, mix until smooth
Pour into pan and bake 70–75 mins or until toothpick comes out clean
Cool completely before adding glaze (if using)
