Ingredients
• 2½ cups all-purpose flour • 1 tsp baking powder • ½ tsp salt • 1 cup butter, softened • 1 cup granulated sugar • 2 eggs • 2 tbsp lemon zest • 2 tsp vanilla extract • 3 tbsp fresh lemon juice • ½ cup granulated sugar for rolling
Instructions
- Preheat oven to 350°F
- Line baking sheets with parchment paper
- Whisk together flour, baking powder, and salt
- Cream butter and sugar until light and fluffy
- Add eggs, lemon zest, vanilla, and lemon juice
- Gradually add flour mixture to wet ingredients
- Roll dough into 1-inch balls
- Roll each ball in granulated sugar
- Place on baking sheets 2 inches apart
- Bake 10-12 minutes until edges are set
- Cool on baking sheets 5 minutes
- Transfer to wire racks to cool completely
