Lemon Sugar Cookies – Soft, Chewy, and Bursting with Fresh Lemon Flavor

Ingredients

• 2½ cups all-purpose flour • 1 tsp baking powder • ½ tsp salt • 1 cup butter, softened • 1 cup granulated sugar • 2 eggs • 2 tbsp lemon zest • 2 tsp vanilla extract • 3 tbsp fresh lemon juice • ½ cup granulated sugar for rolling


Instructions

  1. Preheat oven to 350°F
  2. Line baking sheets with parchment paper
  3. Whisk together flour, baking powder, and salt
  4. Cream butter and sugar until light and fluffy
  5. Add eggs, lemon zest, vanilla, and lemon juice
  6. Gradually add flour mixture to wet ingredients
  7. Roll dough into 1-inch balls
  8. Roll each ball in granulated sugar
  9. Place on baking sheets 2 inches apart
  10. Bake 10-12 minutes until edges are set
  11. Cool on baking sheets 5 minutes
  12. Transfer to wire racks to cool completely
