INGREDIENTS : 1 ½ cups whole milk (warmed to 110°F)
3½ to 4¼ cups bread flour or all-purpose flour (spooned and leveled)
¾ cup granulated sugar
1½ tablespoons lemon zest (about 2 large lemons)
1 large egg (room temperature)
½ teaspoon salt
3 tablespoons unsalted butter (melted)
5 tablespoons unsalted butter (softened)
1 tablespoon unsalted butter (for greasing)
4 ounces full-fat cream cheese (brick style)
2 tablespoons lemon juice (about 1 large lemon)
Olive oil or butter (for greasing)
Instructions
1. In a large bowl, mix warm milk, yeast, egg, sugar, lemon zest, melted butter, and salt. Whisk until foamy.
2. Add flour and knead for 3 minutes (or by hand for 5 minutes).
3. Oil a bowl, place dough inside, cover, and let rise until doubled (about 1 hour).
4. Roll dough into a rectangle, spread with softened butter, and sprinkle with lemon-sugar mixture.
5. Roll tightly, cut into 12 pieces, and place in a greased baking dish.
6. Cover and let rise again for 45-60 minutes.
7. Preheat oven to 350°F and bake for 28-30 minutes until golden brown.
8. For glaze, beat cream cheese and butter, then add powdered sugar, salt, and lemon juice.
9. Drizzle glaze over warm rolls and garnish with lemon slices and zest.
