Ingredients
1 cup shredded zucchini, squeezed well
⅓ cup coconut oil
⅓ cup sugar-free syrup
1 large egg
½ cup Greek yogurt
1 teaspoon vanilla extract
1 ½ cup whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon cinnamon
¼ cup dark chocolate chips (optional)
Instructions
Preheat oven to 350°F. Squeeze zucchini and place in a bowl. Add coconut oil, syrup, egg, Greek yogurt, and vanilla. Fold in flour, baking powder, and cinnamon. Add chocolate chips, transfer to a greased loaf pan, and bake for 35-40 minutes. Cool before slicing.
