Ingredients
1 ΒΌ cup heavy cream (cold)
1 tbsp unflavored gelatin powder
ΒΌ cup cold water
2 oz dark chocolate (melted)

cup sweetener
2 tbsp cocoa powder
1 tsp vanilla extract
Instructions
1. In a small bowl, combine gelatin powder with cold water and let it bloom for 5 minutes. Microwave for 15-20 seconds until dissolved.
2. In a mixing bowl, beat the heavy cream and vanilla extract at medium speed until fluffy and stiff peaks form.
3. Gently fold in the melted chocolate, gelatin mixture, sweetener, and cocoa powder until well combined.
4. Divide the mousse into serving glasses and refrigerate for at least 30 minutes, or overnight for best results.
5. Serve with extra whipped cream or your favorite toppings if desired.
