Luscious Caramel Apple Muffins – A Sweet Taste of Fall

Ingredients

• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ¼ tsp salt
• 2 eggs
• ⅓ cup granulated sugar
• ⅓ cup brown sugar
• ⅓ cup melted butter or coconut oil
• ¼ cup maple syrup
• 1 tsp vanilla extract
• ½ cup unsweetened applesauce
• 1 cup peeled and finely diced apples (Honeycrisp or Granny Smith)
• ⅓ cup caramel sauce (plus extra for drizzling)
• Optional: ½ cup chopped walnuts or pecans


Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, then mix in both sugars, melted butter, maple syrup, vanilla, and applesauce until smooth.
  4. Gradually add dry ingredients and stir until just combined.
  5. Fold in diced apples (and nuts if using).
  6. Spoon about 2 tablespoons of batter into each muffin cup.
  7. Drizzle 1 teaspoon of caramel sauce into the center of each.
  8. Top with remaining batter, covering the caramel.
  9. Bake 18–22 minutes, until golden and a toothpick comes out clean.
  10. Let cool 5 minutes in the pan, then transfer to a wire rack.
  11. Drizzle with extra warm caramel before serving for that luscious finish!
