• ¼ cup maple syrup

• ½ cup unsweetened applesauce
• 1 cup peeled and finely diced apples (Honeycrisp or Granny Smith)
• ⅓ cup caramel sauce (plus extra for drizzling)

Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, then mix in both sugars, melted butter, maple syrup, vanilla, and applesauce until smooth.
- Gradually add dry ingredients and stir until just combined.
- Fold in diced apples (and nuts if using).
- Spoon about 2 tablespoons of batter into each muffin cup.
- Drizzle 1 teaspoon of caramel sauce into the center of each.
- Top with remaining batter, covering the caramel.
- Bake 18–22 minutes, until golden and a toothpick comes out clean.
- Let cool 5 minutes in the pan, then transfer to a wire rack.
- Drizzle with extra warm caramel before serving for that luscious finish!
