Ingredients
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• ¾ cup granulated sugar
• ½ cup brown sugar
• ½ cup cocoa powder (unsweetened)
• 1 tsp baking soda
• ½ tsp salt
• 2 eggs
• ⅓ cup vegetable oil or melted coconut oil
• 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
• 1 tsp vanilla extract
• 1 cup chopped pecans (plus extra for topping)
• Optional: ¼ cup chocolate chips or caramel drizzle
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, cocoa powder, baking soda, and salt.
- In another bowl, beat eggs, then mix in oil, buttermilk, and vanilla until smooth.
- Pour wet ingredients into dry and stir until just combined.
- Fold in chopped pecans (and chocolate chips if using).
- Pour batter into the loaf pan and smooth the top. Sprinkle with extra pecans.
- Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan 10 minutes, then transfer to a wire rack.
✨ Optional glaze: Whisk ½ cup powdered sugar with 1 tbsp maple syrup and 1 tsp milk. Drizzle over cooled loaf!
