Description

Sweet, creamy, and bursting with tropical mango flavor — these no-bake truffles are a healthy, refreshing treat perfect for any time of day!


Ingredients

2 ripe mangoes (fresh or frozen), peeled and diced
1 cup cashews, soaked in water for 2 hours (or boiled for 15 mins)
1/4 cup coconut cream (or canned full-fat coconut milk)
1/4 cup honey or maple syrup (adjust to taste)
1 tsp vanilla extract
1/2 tsp lime zest (optional)
2 tbsp shredded coconut, for rolling (or cacao powder/chocolate for coating)


Instructions

In a food processor, blend mango, soaked cashews, coconut cream, honey, and vanilla until smooth. Scrape down the sides as needed.
Roll mixture into small balls (about 1 tbsp each).
Place on a tray and freeze for 15–20 minutes until firm.
Meanwhile, mix shredded coconut, cocoa powder, or crushed nuts in a bowl for coating.
Once firm, roll each truffle in your desired coating.
Store in an airtight container in the freezer for up to 1 week or fridge for 3 days. Let sit at room temperature 5–10 minutes before eating for best texture.
