Ingredients
2 cups cottage cheese, 1/4 cup maple syrup, 1 teaspoon vanilla extract, 1/2 cup chopped pecans, whipped cream and extra pecans for garnish
Instructions
In a blender or food processor, combine cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy. Stir in the chopped pecans. Spoon the mousse into four serving glasses. Chill in the refrigerator for at least 1 hour before serving. Garnish with whipped cream and extra pecans before serving.
