Ingredients

1 cup almond flour
¼ cup powdered erythritol or monk fruit sweetener
1 tsp matcha green tea powder
¼ tsp vanilla extract
Pinch of salt
For the Filling:

4 oz cream cheese, softened
2 tbsp heavy cream or coconut cream
¼ cup powdered sweetener
½ tsp matcha powder
½ tsp vanilla extract
INGREDIENTS FOR OPTIONAL COATING:
Extra matcha powder
Crushed almonds
Sugar-free chocolate shavings


Instructions

In a bowl, mix almond flour, powdered sweetener, matcha powder, vanilla, and salt until well combined.
Roll into small balls (about 1 tbsp each) and place on a lined baking sheet. Flatten slightly with your palm or a spatula.
Bake at 325°F (160°C) for 12–15 minutes until lightly golden. Let cool completely.
For the filling: Beat cream cheese, heavy cream, powdered sweetener, matcha powder, and vanilla until smooth and creamy.
Spread a spoonful of the matcha cream onto the flat side of one cookie and gently press another cookie on top to form a sandwich.
Optional: Dust with extra matcha or dip edges in crushed almonds or chocolate shavings.
Chill in the fridge before serving for best texture.
