Ingredients
For the Crepes (Keto):
2 large eggs
¼ cup almond flour
2 tbsp coconut flour
¼ tsp baking powder
Pinch of salt
½ tsp matcha green tea powder (for light layer flavor)
¼ cup heavy cream or unsweetened almond milk
2 tbsp melted butter or coconut oil
Optional: 1 tsp vanilla extract or cinnamon for extra depth
Optional topping: sesame seeds or fresh mint leaves
For the Creamy Filling:
8 oz cream cheese, softened
¼ cup heavy cream or full-fat coconut cream
¼ cup powdered erythritol or monk fruit sweetener
½ tsp vanilla extract
Pinch of salt
Optional: ¼ tsp ground turmeric or 1 egg yolk for golden color FOR KETO VERSION:
Use full-fat dairy , unsweetened almond milk , and ensure your matcha powder is pure and not mixed with sugar. For vegan option, use flax egg , nut-based cream cheese , and coconut cream .
Instructions
Make the Crepe Batter:
In a bowl, mix almond flour , coconut flour , baking powder , matcha powder , and salt .
In another bowl, whisk eggs , heavy cream , melted butter , and vanilla until smooth and slightly thickened.
Gradually mix wet ingredients into dry until just combined. Let rest for 5–10 minutes to allow the flour to absorb moisture.
Cook the Crepes:
Heat a small non-stick skillet over medium heat. Lightly grease with butter or oil.
Pour about 2 tbsp of batter into the pan, swirling to coat the bottom evenly.
Cook for 1–2 minutes per side until set and lightly golden. Repeat with remaining batter — makes about 8–10 crepes .
Make the Filling:
In a bowl, beat cream cheese until smooth. Add heavy cream , powdered sweetener , vanilla , and salt . Mix well until thick and fluffy.
Assemble the Cake:
Place one crepe on a serving plate. Spread a thin layer of filling on top.
Stack another crepe and repeat until all layers are used.
Chill in the fridge for at least 1 hour to firm up before slicing.
Serve:
Garnish with matcha dusting , whipped cream , or fresh mint before serving cold or at room temperature.
