Ingredients

• 24 graham crackers, crushed • 6 tbsp melted butter • 16 oz cream cheese, softened • ½ cup brown sugar • 1 cup pumpkin puree • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp ginger • ¼ tsp salt


Instructions

  1. Preheat oven to 325°F
  2. Mix graham cracker crumbs with melted butter
  3. Press into bottom of 12 muffin tin cups
  4. Beat cream cheese and brown sugar until smooth
  5. Add pumpkin puree, eggs, and vanilla
  6. Mix in spices and salt
  7. Spoon filling over crusts
  8. Bake 20-25 minutes until set
  9. Cool completely in pan
  10. Refrigerate 4 hours or overnight
  11. Top with whipped cream if desired
  12. Serve chilled
