Ingredients
• 24 graham crackers, crushed • 6 tbsp melted butter • 16 oz cream cheese, softened • ½ cup brown sugar • 1 cup pumpkin puree • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp ginger • ¼ tsp salt
Instructions
- Preheat oven to 325°F
- Mix graham cracker crumbs with melted butter
- Press into bottom of 12 muffin tin cups
- Beat cream cheese and brown sugar until smooth
- Add pumpkin puree, eggs, and vanilla
- Mix in spices and salt
- Spoon filling over crusts
- Bake 20-25 minutes until set
- Cool completely in pan
- Refrigerate 4 hours or overnight
- Top with whipped cream if desired
- Serve chilled
