Ingredients
INGREDIENTS: 1 cup unsalted butter (softened)
⅔ cup powdered sugar (sifted)
2 ¼ cups all-purpose flour (spooned and leveled)
½ teaspoon salt
1 teaspoon mint extract or peppermint extract
Green food coloring (gel)
¾ cup mini chocolate chips
Additional powdered sugar (for coating)
Instructions
1. Line a large cookie sheet with parchment paper and set aside.
2. Beat the butter and powdered sugar together until light and fluffy.
3. Mix in the flour, salt, and extract just until combined.
4. Add green food color a few drops at a time until desired color is achieved.
5. Stir in mini chocolate chips.
6. Scoop out one tablespoon of dough at a time and form into a ball. Place on the prepared cookie sheet.
7. Cover and refrigerate dough for at least 30 minutes.
8. Preheat oven to 375°F (190°C).
9. Bake cookies for 7 to 8 minutes, until very lightly browned on the bottom. Let cool for 5 minutes.
10. Dust a second baking sheet with powdered sugar and transfer cookies to it, dusting with more powdered sugar.
11. Let cookies cool completely.
12. Coat cookies in powdered sugar before serving.
13. Store leftovers in an airtight container for up to four days.
