Creamy, dreamy, and refreshingly tangy — this easy no-bake cheesecake is made with real avocado and zesty lime for a healthy dessert that wows!
Ingredients
For the Crust:
1½ cups graham cracker crumbs (or digestive/oat-based crust)
5 tbsp melted coconut oil
2 tbsp honey or maple syrup
For the Filling:
2 ripe avocados
14 oz can full-fat coconut milk (chilled) or 8 oz cream cheese (softened)
1/3 cup honey or maple syrup
1/4 cup fresh lime juice (about 2 limes)
Zest of 1 lime
1 tsp vanilla extract
1/4 cup Greek yogurt or plant-based yogurt (optional, for tang)
Instructions
In a bowl, mix crust ingredients and press into the bottom of a lined springform pan or pie dish.
In a food processor, blend avocados, coconut milk (or cream cheese), honey, lime juice, zest, and vanilla until smooth and creamy.
Pour filling over the crust and smooth the top.
Chill in the fridge for at least 4 hours or overnight until firm.
Slice and serve cold — topped with lime slices, mint, or whipped coconut cream if you like!
