Ingredients

For the crust:
• 1 cup graham cracker crumbs (or gluten-free cookies)
• 2 tbsp melted butter or coconut oil
• 1 tbsp cocoa powder (for extra chocolate flavor)

For the filling:
• 8 oz cream cheese, softened (or dairy-free alternative)
• ¼ cup caramel sauce (plus more for layering)
• 2 tbsp powdered sugar
• ½ tsp vanilla extract
• 1 tbsp heavy cream or milk

For the topping:
• ¼ cup dark chocolate chips (or dairy-free)
• 1 tsp coconut oil or shortening
• Flaky sea salt (optional, for garnish)


Instructions

  1. Make the crust: Mix graham cracker crumbs, melted butter, and cocoa powder. Press 1–2 tsp into the bottom of 12 mini muffin cups or silicone molds. Chill 10 minutes.
  2. Make the filling: In a bowl, beat cream cheese, ¼ cup caramel, powdered sugar, vanilla, and cream until smooth and fluffy.
  3. Spoon filling over crusts. Swirl in small drops of extra caramel for a marbled effect.
  4. Chill 30 minutes to firm up.
  5. Make the topping: Melt chocolate chips with coconut oil until smooth. Drizzle over each bite.
  6. Sprinkle with flaky sea salt if desired. Chill 10 more minutes to set the chocolate.
  7. Pop out and serve cold!
