For the crust:

• ¼ cup caramel sauce (plus more for layering)
• 2 tbsp powdered sugar
• ½ tsp vanilla extract
• 1 tbsp heavy cream or milk
For the topping:
• ¼ cup dark chocolate chips (or dairy-free)
• 1 tsp coconut oil or shortening
• Flaky sea salt (optional, for garnish)
Instructions
- Make the crust: Mix graham cracker crumbs, melted butter, and cocoa powder. Press 1–2 tsp into the bottom of 12 mini muffin cups or silicone molds. Chill 10 minutes.
- Make the filling: In a bowl, beat cream cheese, ¼ cup caramel, powdered sugar, vanilla, and cream until smooth and fluffy.
- Spoon filling over crusts. Swirl in small drops of extra caramel for a marbled effect.
- Chill 30 minutes to firm up.
- Make the topping: Melt chocolate chips with coconut oil until smooth. Drizzle over each bite.
- Sprinkle with flaky sea salt if desired. Chill 10 more minutes to set the chocolate.
- Pop out and serve cold!
