Ingredients
For the Crust:
1 cup graham cracker crumbs
3 tbsp melted butter
2 tbsp sugar
For the Filling:
8 oz cream cheese, softened
½ cup sweetened condensed milk
¼ cup key lime juice (or regular lime juice)
1 tsp lime zest
½ tsp vanilla extract
Topping (optional):
Whipped cream
Extra lime zest or slices for garnish
Instructions
In a bowl, mix graham crumbs, melted butter, and sugar. Press into mini muffin tins or silicone cupcake molds. Chill in freezer for 10–15 minutes.
Beat cream cheese until smooth. Add condensed milk, lime juice, zest, and vanilla. Mix until creamy.
Spoon filling into crusts and smooth the tops.
Chill in fridge for at least 2 hours or until set.
Top with whipped cream and a touch of zest before serving!
