Old-Fashioned Southern Chicken Salad

Ingredients

• 3 cups cooked chicken, shredded or finely chopped (rotisserie works great!)
• ½ cup celery, finely diced
• ½ cup seedless red grapes, halved
• ⅓ cup toasted pecans, chopped
• 2–3 green onions, thinly sliced
• ¾ cup mayonnaise (or Greek yogurt for a lighter version)
• 1 tbsp Dijon mustard or sweet pickle relish
• 1 tsp lemon juice
• Salt & black pepper to taste
• Optional: pinch of paprika or dash of hot sauce


Instructions

  1. In a large bowl, combine chicken, celery, grapes, pecans, and green onions.
  2. In a small bowl, whisk mayonnaise, mustard (or relish), lemon juice, salt, and pepper.
  3. Pour dressing over chicken mixture; gently fold until evenly coated.
  4. Taste and adjust seasoning—add a pinch of paprika for color or hot sauce for a kick if desired.
  5. Chill at least 30 minutes to let flavors meld (optional but recommended).
  6. Serve in butter lettuce cups, on croissants, with crackers, or atop a bed of greens.
