Ingredients

๐ŸŠย 2 teaspoons baking powder (8g)
๐ŸŠย ยฝ teaspoon salt (3g)
๐ŸŠย 1 cup plain full-fat Greek yogurt (240g)
๐ŸŠย 1 cup granulated sugar (200g)
๐ŸŠย 3 eggs
๐ŸŠย 1 tablespoon orange zest (6g)
๐ŸŠย ยผ cup freshly squeezed orange juice (60ml)
๐ŸŠย 1 teaspoon vanilla extract (5ml)
๐ŸŠย ยฝ cup olive oil (120ml)
๐ŸŠย Icing sugar for dusting (optional)


Instructions

Preheat the oven to 350ยฐF (175ยฐC). Grease and flour an 8.5 x 4.5 inch loaf pan. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, combine yogurt, sugar, eggs, orange zest, orange juice, and vanilla. Whisk in olive oil. Add dry ingredients to the yogurt mixture and stir gently. Pour batter into the loaf pan and bake for 50-55 minutes until golden brown and a toothpick comes out clean. Cool in the pan for 20 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
