Ingredients
1 cup almond flour
¼ cup coconut flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
2 large eggs
¼ cup melted coconut oil or butter
¼ cup heavy cream or unsweetened almond milk
Zest of 1 orange
2 tbsp fresh orange juice
1 tsp vanilla extract
1 tbsp poppy seeds
Optional: Crushed almonds or powdered sweetener for topping
Instructions
Preheat oven to 350°F (175°C). Line a 6-cup muffin tin with parchment paper liners.
In a bowl, mix almond flour , coconut flour , baking powder , baking soda , and salt .
In another bowl, whisk eggs , melted oil , heavy cream , orange zest , orange juice , and vanilla until smooth.
Add wet ingredients to dry and mix well. Stir in poppy seeds .
Spoon batter into muffin cups, filling almost to the top.
Optional: Sprinkle crushed almonds or extra zest on top before baking.
Bake for 20–22 minutes or until golden and firm to touch.
Let cool completely before removing from liners.
