Flaky golden pastry filled with sweet, juicy peach goodness in every bite!
Ingredients
1 sheet puff pastry (thawed)
1 cup fresh or canned peaches, diced
2 tbsp maple syrup or brown sugar
1 tsp lemon juice
½ tsp cinnamon
1 tbsp cornstarch (optional, for thickening)
1 egg (for egg wash)
Optional: powdered sugar glaze (½ cup powdered sugar + 1 tbsp milk)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, mix peaches, maple syrup, lemon juice, cinnamon, and cornstarch (if using).
Roll out puff pastry and cut into 4 squares. Spoon peach filling into the center of each.
Fold each square into a triangle, pressing edges with a fork to seal.
Brush tops with beaten egg for a golden finish.
Bake for 15–18 minutes or until puffed and golden brown.
Drizzle with glaze if desired. Serve warm or at room temp!
