Ingredients
• 1¼ cups natural creamy peanut butter (no sugar added)
• ½ cup monk fruit–erythritol blend (1:1 sugar substitute, blood-sugar friendly)
• 1 large egg
• 1 tsp pure vanilla extract
• ¼ tsp sea salt
• 12–14 sugar-free chocolate kisses (e.g., Lily’s or ChocZero)
• Optional: 1 tbsp flaxseed meal (for fiber boost & binding)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
- In a bowl, mix peanut butter, sweetener, egg, vanilla, salt (and flaxseed, if using) until smooth and thick.
- Scoop 1-tbsp portions, roll into balls, and place 2″ apart on sheet.
- Bake 10–12 minutes—cookies will look soft and slightly puffed (they firm up as they cool).
- Immediately press 1 chocolate kiss into center of each warm cookie—don’t wait!
- Let cool on sheet 10 min, then transfer to a rack. Kisses will set with a gentle sheen.
