Ingredients
½ cup creamy peanut butter (or almond or sunflower seed butter)
¼ cup honey or maple syrup
1 tsp vanilla extract
3 cups puffed rice cereal (like Rice Krispies)
Pinch of salt
Optional: ¼ cup chocolate chips or crushed peanuts for topping
FOR KETO/LOW-CARB OPTION:
Use sugar-free marshmallows and low-carb puffed rice cereal. Replace honey with powdered erythritol or allulose and use 2 tbsp powdered peanut butter (optional).
Instructions
Lightly grease an 8×8-inch baking dish or line with parchment paper.
In a large bowl, mix peanut butter, honey, vanilla, and salt until smooth and thick.
Fold in puffed rice cereal until evenly coated and sticky.
Press firmly into the prepared pan using a spatula or lightly buttered hands.
Optional: Melt chocolate chips and drizzle over the top before it sets.
Let cool completely at room temperature or refrigerate to firm up faster.
