Ingredients
• 1 cup chopped pecans (plus extra for rolling)
• ½ cup dates, pitted (Medjool work best)
• ¼ cup maple syrup or honey
• 2 tbsp coconut oil or butter
• 1 tsp vanilla extract
• ½ tsp cinnamon
• Pinch of salt
• Optional: 2 tbsp ground flaxseed or oat flour (to help bind)
Instructions
- In a food processor, pulse pecans until finely chopped (not powdered). Set aside ¼ cup for coating.
- Add dates, maple syrup, coconut oil, vanilla, cinnamon, salt, and optional flaxseed. Process until a sticky dough forms (30–60 seconds). If too dry, add 1 tsp water; if too wet, add more ground pecans.
- Roll mixture into 1-inch balls using slightly damp hands.
- Roll each ball in reserved chopped pecans to coat.
- Place on a tray and chill 30 minutes to firm up.
