Pecan Pie Cookies: A Bite-Sized Taste of Southern Comfort

Ingredients

• 2¼ cups all-purpose flour • 1 tsp baking soda • 1 tsp salt • 1 cup butter, softened • ¾ cup granulated sugar • ¾ cup brown sugar • 2 eggs • 1 tsp vanilla extract • 1 cup chopped pecans

FOR PECAN FILLING: • 1 cup brown sugar • ¼ cup butter, melted • 1 egg • 1 tsp vanilla extract • 1 cup chopped pecans

FOR GLAZE: • ½ cup powdered sugar • 1-2 tbsp milk • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F
  2. Line baking sheets with parchment paper
  3. Whisk together flour, baking soda, and salt
  4. Cream butter and both sugars until fluffy
  5. Add eggs and vanilla, beat well
  6. Gradually add flour mixture to wet ingredients
  7. Fold in 1 cup chopped pecans
  8. Drop rounded tablespoons onto baking sheets
  9. Bake 10-12 minutes until edges are golden
  10. Cool on baking sheets 5 minutes
  11. For filling: mix brown sugar, melted butter, egg, and vanilla
  12. Stir in 1 cup pecans
  13. Press filling mixture onto cooled cookies
  14. Bake 5 minutes more
  15. Mix glaze ingredients until smooth
  16. Drizzle over warm cookies
