Ingredients
• 2 cups all-purpose flour • 1 cup brown sugar • ½ cup butter, melted • 2 eggs • 1 tsp vanilla extract • 1 tsp baking powder • ½ tsp salt • ½ cup milk
FOR PECAN FILLING: • ½ cup brown sugar • ¼ cup butter, melted • 1 egg • 1 tsp vanilla extract • 1 cup chopped pecans
FOR GLAZE: • 1 cup powdered sugar • 2-3 tbsp milk • ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Grease 12 muffin tin cups
- In large bowl, mix flour, brown sugar, baking powder, and salt
- In separate bowl, whisk melted butter, eggs, vanilla, and milk
- Add wet ingredients to dry ingredients, mix until combined
- For filling: mix brown sugar, melted butter, egg, and vanilla
- Stir in chopped pecans
- Fill muffin cups halfway with batter
- Add spoonful of pecan filling to each muffin
- Cover with remaining batter
- Bake 20-25 minutes until golden
- Cool 10 minutes in pan
- Mix glaze ingredients until smooth
- Drizzle over warm muffins
