Pecan Pie Muffins: A Southern-Inspired, Gooey-Sweet Treat That Brings the Classic Pie to Muffin Form

Ingredients

• 2 cups all-purpose flour • 1 cup brown sugar • ½ cup butter, melted • 2 eggs • 1 tsp vanilla extract • 1 tsp baking powder • ½ tsp salt • ½ cup milk

FOR PECAN FILLING: • ½ cup brown sugar • ¼ cup butter, melted • 1 egg • 1 tsp vanilla extract • 1 cup chopped pecans

FOR GLAZE: • 1 cup powdered sugar • 2-3 tbsp milk • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F
  2. Grease 12 muffin tin cups
  3. In large bowl, mix flour, brown sugar, baking powder, and salt
  4. In separate bowl, whisk melted butter, eggs, vanilla, and milk
  5. Add wet ingredients to dry ingredients, mix until combined
  6. For filling: mix brown sugar, melted butter, egg, and vanilla
  7. Stir in chopped pecans
  8. Fill muffin cups halfway with batter
  9. Add spoonful of pecan filling to each muffin
  10. Cover with remaining batter
  11. Bake 20-25 minutes until golden
  12. Cool 10 minutes in pan
  13. Mix glaze ingredients until smooth
  14. Drizzle over warm muffins
