Buttery, moist cake topped with gooey caramel and crunchy pecans!
Ingredients
For the Cake:
1 box yellow cake mix (or your favorite homemade mix)
1 cup milk
½ cup coconut oil (or melted butter)
3 large eggs
1 tsp vanilla extract
For the Pecan Praline Topping:
1 cup chopped pecans
½ cup maple syrup or coconut sugar
¼ cup unsalted butter
¼ cup coconut cream (or heavy cream)
Pinch of salt
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a bowl, mix cake mix, milk, coconut oil, eggs, and vanilla until smooth. Pour into baking dish.
Bake for 28–32 minutes or until a toothpick comes out clean. Let cool slightly.
While cake bakes, make the topping: In a saucepan, melt butter over medium heat. Add maple syrup, coconut cream, and salt. Stir and simmer 2–3 minutes.
Stir in pecans and vanilla. Simmer another minute, then remove from heat.
Pour warm praline topping over the slightly cooled cake and spread evenly. Let it set before slicing!
