Ingredients

โ€ข 1 cup crushed pineapple, well-drained (reserve juice)
โ€ข ยฝ cup sweetened shredded coconut
โ€ข ยฝ cup chopped pecans or walnuts
โ€ข ยผ cup honey or maple syrup
โ€ข 2 tbsp unsweetened shredded coconut (for rolling)
โ€ข Optional: 1 tsp vanilla extract
โ€ข Pinch of salt


Instructions

  1. In a bowl, combine drained crushed pineapple, sweetened coconut, chopped nuts, honey, vanilla (if using), and salt. Mix until sticky and well blended.
  2. Roll mixture into 1-inch balls using slightly damp hands.
  3. Roll each ball in unsweetened coconut to coat.
  4. Place on a tray and chill 30 minutes to firm up.
