โข ยผ cup honey or maple syrup
โข 2 tbsp unsweetened shredded coconut (for rolling)
โข Optional: 1 tsp vanilla extract
โข Pinch of salt
Instructions
- In a bowl, combine drained crushed pineapple, sweetened coconut, chopped nuts, honey, vanilla (if using), and salt. Mix until sticky and well blended.
- Roll mixture into 1-inch balls using slightly damp hands.
- Roll each ball in unsweetened coconut to coat.
- Place on a tray and chill 30 minutes to firm up.
