Soft, melt-in-your-mouth cookies with a tropical pineapple twist and creamy texture!
Ingredients
½ cup butter, softened
8 oz cream cheese, softened
1 cup sugar
1 large egg
1 tsp vanilla extract
1 cup canned pineapple, drained and finely chopped
2½ cups all-purpose flour
1 tsp baking powder
¼ tsp salt
½ cup shredded coconut (optional)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, beat together butter, cream cheese, and sugar until creamy and smooth.
Add the egg and vanilla extract, mixing until well combined.
Stir in the chopped pineapple and shredded coconut (if using).
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until a soft dough forms.
Drop spoonfuls of dough onto the prepared baking sheet.
Bake for 10–12 minutes, or until the edges are lightly golden.
Cool on a wire rack before serving.
