Soft, tropical muffins bursting with juicy pineapple and creamy centers!
Ingredients
For the muffins:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup coconut oil (melted)
½ cup maple syrup or coconut sugar
2 eggs
1 tsp vanilla extract
½ cup crushed pineapple (drained)
¼ cup Greek yogurt or sour cream
For the cream cheese filling:
4 oz cream cheese, softened
2 tbsp maple syrup
½ tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, whisk melted coconut oil, maple syrup, eggs, vanilla, pineapple, and yogurt.
Mix wet and dry ingredients until just combined.
In a small bowl, mix cream cheese filling ingredients until smooth.
Spoon half the muffin batter into tins. Add 1 tsp cream cheese mix in center, then top with remaining batter.
Bake 18–22 minutes or until golden and a toothpick comes out clean (aside from cream cheese).
Cool in pan for 5 minutes, then transfer to a wire rack.
