1 3/4 cups all-purpose flour
2/3 cup sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
1/3 cup vegetable oil
1 tsp vanilla extract
Optional: 1/2 cup chopped nuts or shredded coconut
Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, mix flour, sugar, baking soda, and salt.
In another bowl, whisk eggs, oil, vanilla, and pineapple (with juice).
Combine wet and dry ingredients, stir just until mixed.
Fold in nuts or coconut if using.
Pour into loaf pan and bake 45–55 mins.
Cool before slicing.
