Ingredients
• 8 cups popped popcorn (plain, unsalted) • 1 cup light corn syrup • ½ cup brown sugar • ¼ cup butter • 1 tsp vanilla extract • 2 cups mini marshmallows • ¼ tsp salt
Instructions
- Pop corn and remove any unpopped kernels
- Place popcorn in large bowl
- In medium saucepan, combine corn syrup, brown sugar, and butter
- Cook over medium heat, stirring constantly
- Bring to boil and cook 5 minutes without stirring
- Remove from heat and quickly stir in vanilla and salt
- Pour syrup over popcorn
- Stir quickly to coat all popcorn evenly
- Add mini marshmallows and fold in quickly
- Working fast, butter hands and shape into balls
- Press firmly but gently to hold shape
- Let cool completely before serving
- Store in airtight container
