Pumpkin Apple Baked Oatmeal: A Cozy and Healthy Fall Breakfast

Ingredients

• 3 cups old-fashioned oats • 1 cup pumpkin puree • 1 cup milk • ½ cup maple syrup • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 2 apples, diced • ½ cup chopped pecans

FOR CRUNCHY TOPPING: • ¼ cup brown sugar • 2 tbsp butter, melted • 2 tbsp oats • 1 tbsp chopped pecans


Instructions

  1. Preheat oven to 375°F
  2. Grease 9×13 inch baking dish
  3. In large bowl, mix oats, pumpkin puree, and milk
  4. Whisk in maple syrup, eggs, and vanilla
  5. Add spices and salt, mix well
  6. Stir in diced apples and ½ cup pecans
  7. Pour mixture into prepared baking dish
  8. Mix topping ingredients in small bowl
  9. Sprinkle topping over oatmeal mixture
  10. Bake 35-40 minutes until set and golden
  11. Cool 10 minutes before serving
  12. Serve warm with milk or yogurt
