Ingredients
• 3 cups old-fashioned oats • 1 cup pumpkin puree • 1 cup milk • ½ cup maple syrup • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 2 apples, diced • ½ cup chopped pecans
FOR CRUNCHY TOPPING: • ¼ cup brown sugar • 2 tbsp butter, melted • 2 tbsp oats • 1 tbsp chopped pecans
Instructions
- Preheat oven to 375°F
- Grease 9×13 inch baking dish
- In large bowl, mix oats, pumpkin puree, and milk
- Whisk in maple syrup, eggs, and vanilla
- Add spices and salt, mix well
- Stir in diced apples and ½ cup pecans
- Pour mixture into prepared baking dish
- Mix topping ingredients in small bowl
- Sprinkle topping over oatmeal mixture
- Bake 35-40 minutes until set and golden
- Cool 10 minutes before serving
- Serve warm with milk or yogurt
