Pumpkin Brownies

Ingredients

• 1/2 cup pumpkin puree (unsweetened)
• 1/3 cup maple syrup or honey
• 1/4 cup almond butter (or coconut oil, melted)
• 1 egg
• 1 tsp vanilla extract
• 1/2 cup cocoa powder (unsweetened)
• 1/2 cup almond flour
• 1/2 tsp baking soda
• 1/2 tsp pumpkin pie spice
• 1/4 tsp salt
• 1/3 cup dark chocolate chips (or sugar-free)
• Optional: chopped pecans or walnuts


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper.
  2. In a large bowl, mix pumpkin, maple syrup, almond butter, egg, and vanilla until smooth.
  3. Sift in cocoa powder, then add almond flour, baking soda, pumpkin spice, and salt. Stir until well combined.
  4. Fold in chocolate chips and nuts (if using).
  5. Pour batter into the pan and smooth the top.
  6. Bake 20–23 minutes, until a toothpick comes out with moist crumbs (not wet batter).
  7. Let cool completely before slicing—this helps them set and get that fudgy texture!
