Ingredients
For the Donuts:
1 cup pumpkin puree
2 eggs
⅓ cup maple syrup or coconut sugar
¼ cup melted coconut oil or butter
1 tsp vanilla extract
1 cup flour (all-purpose or whole wheat)
1 tsp baking powder
½ tsp baking soda
1½ tsp ground cinnamon
½ tsp pumpkin spice (or mix nutmeg, ginger, cloves)
¼ tsp salt
For the Cinnamon Sugar Coating:
2 tbsp melted coconut oil or butter
¼ cup coconut sugar or cane sugar
1 tsp cinnamon
Instructions
Preheat oven to 350°F (175°C). Grease a donut pan.
In a bowl, whisk pumpkin, eggs, maple syrup, oil, and vanilla.
Add in flour, baking powder, baking soda, spices, and salt. Mix until just combined.
Spoon batter into donut pan (don’t overfill).
Bake for 12–14 minutes or until tops spring back when touched.
Cool slightly, then brush with melted oil and dip into cinnamon sugar mix.
Enjoy warm or store in an airtight container.
