Ingredients
• 1 cup pumpkin puree (unsweetened)
• 1/3 cup pure maple syrup
• 1/4 cup unsweetened applesauce
• 1 egg
• 1 tsp vanilla extract
• 1 1/2 cups almond flour
• 1/2 cup oat flour (gluten-free if needed)
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp cinnamon
• 1/4 tsp nutmeg
• 1/4 tsp ginger
For the swirl:
• 2 tbsp coconut sugar (or brown sugar)
• 1 tsp cinnamon
• 1 tsp melted coconut oil
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a small loaf pan (8×4 inches) or line with parchment paper.
- In a large bowl, mix pumpkin, maple syrup, applesauce, egg, and vanilla until smooth.
- Add almond flour, oat flour, baking soda, salt, cinnamon, nutmeg, and ginger. Stir until well combined.
- In a small bowl, mix coconut sugar, cinnamon, and coconut oil to form a paste.
- Pour half the batter into the loaf pan.
- Drop spoonfuls of cinnamon swirl over the batter and gently swirl with a knife.
- Top with remaining batter and smooth the top.
- Bake 35–40 minutes, until a toothpick comes out clean.
- Let cool in pan 10 minutes, then transfer to a rack to cool completely before slicing.
