Ingredients

• 2 cups all-purpose flour • 1 cup granulated sugar • ½ cup butter, softened • 1 cup pumpkin puree • 2 eggs • ½ cup buttermilk • 1 tsp vanilla extract • 1 tsp baking soda • ½ tsp salt • 1 tsp cinnamon • ½ tsp nutmeg

FOR STREUSEL TOPPING: • ½ cup brown sugar • ¼ cup flour • 2 tbsp butter, cold • 1 tsp cinnamon

FOR MAPLE GLAZE: • 1 cup powdered sugar • 2 tbsp maple syrup • 1-2 tbsp milk • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F
  2. Grease 9×13 inch baking pan
  3. Cream butter and sugar until fluffy
  4. Add pumpkin, eggs, buttermilk, and vanilla
  5. Mix flour, baking soda, salt, cinnamon, nutmeg
  6. Alternate adding flour mixture and buttermilk
  7. Mix streusel ingredients with fork until crumbly
  8. Spread batter in pan, sprinkle with streusel
  9. Bake 35-40 minutes until toothpick comes clean
  10. Cool 10 minutes
  11. Mix glaze ingredients until smooth
  12. Drizzle over warm cake
  13. Serve warm or cool
