Ingredients

• 2 cups all-purpose flour • 1 cup pumpkin puree • ½ cup butter, softened • ½ cup brown sugar • ¼ cup granulated sugar • 1 egg • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ½ tsp baking soda • ¼ tsp salt • ½ cup granulated sugar for rolling


Instructions

  1. Preheat oven to 375°F
  2. Line baking sheets with parchment paper
  3. Cream butter and both sugars until fluffy
  4. Add pumpkin, egg, and vanilla, mix well
  5. Combine flour, spices, baking soda, and salt
  6. Gradually add flour mixture to wet ingredients
  7. Cover dough and chill 1 hour
  8. Pour granulated sugar into shallow dish
  9. Roll dough into 1-inch balls
  10. Roll each ball in sugar to coat
  11. Place on baking sheets 2 inches apart
  12. Bake 10-12 minutes until edges are set
  13. Cool on baking sheets 5 minutes
  14. Transfer to wire racks to cool completely
