Pumpkin French Toast: The Ultimate Fall Breakfast

Ingredients

• 8 thick slices bread (brioche or challah work best) • 1 cup pumpkin puree • 4 eggs • ½ cup milk • ¼ cup maple syrup • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • 2 tbsp butter • 2 tbsp brown sugar • ¼ cup chopped pecans • Maple syrup for serving


Instructions

  1. In large bowl, whisk together pumpkin puree, eggs, milk, maple syrup, and vanilla
  2. Add pumpkin pie spice, cinnamon, and nutmeg, mix well
  3. Heat large skillet over medium heat
  4. Melt 1 tbsp butter in skillet
  5. Dip bread slices in pumpkin mixture, coating both sides
  6. Cook French toast 3-4 minutes per side until golden brown
  7. Add remaining butter to skillet
  8. Sprinkle brown sugar and pecans in butter
  9. Cook 1-2 minutes until caramelized
  10. Serve French toast topped with pecan mixture
  11. Drizzle with additional maple syrup
  12. Garnish with extra chopped pecans
