Ingredients
• 8 thick slices bread (brioche or challah work best) • 1 cup pumpkin puree • 4 eggs • ½ cup milk • ¼ cup maple syrup • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • 2 tbsp butter • 2 tbsp brown sugar • ¼ cup chopped pecans • Maple syrup for serving
Instructions
- In large bowl, whisk together pumpkin puree, eggs, milk, maple syrup, and vanilla
- Add pumpkin pie spice, cinnamon, and nutmeg, mix well
- Heat large skillet over medium heat
- Melt 1 tbsp butter in skillet
- Dip bread slices in pumpkin mixture, coating both sides
- Cook French toast 3-4 minutes per side until golden brown
- Add remaining butter to skillet
- Sprinkle brown sugar and pecans in butter
- Cook 1-2 minutes until caramelized
- Serve French toast topped with pecan mixture
- Drizzle with additional maple syrup
- Garnish with extra chopped pecans
