Pumpkin Hand Pies

Ingredients

• 1 sheet frozen puff pastry, thawed (or homemade pie dough)
• 1 cup pumpkin puree (unsweetened)
• 2 tbsp maple syrup or brown sugar
• 1 tsp pumpkin pie spice
• 1/4 tsp vanilla extract
• 1 egg (for egg wash)
• 1 tbsp coarse sugar (optional, for sparkle)
• Cooking spray or butter (for greasing)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet or line with parchment paper.
  2. In a bowl, mix pumpkin puree, maple syrup, pumpkin pie spice, and vanilla until smooth. Set aside.
  3. Roll out puff pastry and cut into 4-inch squares (6–8 total).
  4. Spoon 1–2 tablespoons of pumpkin filling onto one half of each square, leaving a border.
  5. Fold dough over to create a triangle. Press edges with a fork to seal tightly.
  6. Cut 2–3 small slits on top for steam to escape.
  7. Beat egg and brush over each pie. Sprinkle with coarse sugar for a sweet crunch.
  8. Bake 20–22 minutes, until golden brown and puffed.
  9. Let cool 5–10 minutes before serving. Enjoy warm with a dollop of whipped cream or yogurt!
