Instructions

  1. In a blender or bowl, combine apple juice, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla.
  2. Blend until completely smooth and frothy.
  3. Add water or extra juice to reach your preferred thickness. For a creamy version, blend in a splash of coconut milk.
  4. Serve chilled over ice for a refreshing drink, or warm on the stove over low heat (do not boil) for a cozy mug of comfort.
